Hand picked grapes delivered to cool tanks in order to better extract grape aromas. Must is immediately drawn off from the skins to reduce colour intensity and to control temperature. Alcoholic fermentation at low temperatures using selective yeasts for 11 days until sugars are fully converted into alcohol. Malolactic fermentation is started but stopped intentionally to maintain good acidity.
Appearance: medium salmon-pink with shades of violet. Aroma: Moderate intensity on the nose. An aroma of wild roses with hints of wild flowers, raspberries, and citrus fruits that match perfectly. Palate: Well balanced, elegant and refreshing. A crisp wine with a tinge of rose petals maintaining its acidity to the very last sip. To pair with pasta, smoked food, salad and Asian dishes.
